carrot apple soup

I made this last night and it is delicious! Such a great fall recipe!

Carrot Apple soup
1 medium onion
1 leek, white part only
1 lb carrots (peeled and chopped into 1/2 inch slices)
1 tart apple like granny smith (peeled, cored, and chopped)
1 tb canola oil
3 cups chicken broth

Heat oil in a large heavy skillet or dutch oven. Chop the onion and the leek and saute in skillet with oil until translucent. Add carrots and apple and saute for 5 minutes, stirring constantly. Add chicken broth and bring to a boil.Reduce to low-medium heat and simmer for 30 minutes or until carrots are very soft. Once finished cooking, add in batches to a food processor and liquefy. Add more chicken stock if needed to reach desired consistency. Add back to skillet or dutch over and heat to boiling, stirring constantly. Then serve!

Being vegan, Im sure I could use veggie stock for this!
